How we saved €4,000 in the first year
This is our restaurant — not a customer average, not a case somebody told us about. €35,000 a month, a real kitchen, a real team, and our own books before and after.
Two weeks of honest data entry gave us the first real insight: food cost at 36%, payroll at 42%. Seventy-eight cents of every euro gone before rent. What followed was about a dozen small fixes — portions weighed, ordering done against the inventory count, hours moved to where the guests actually were.
€4,000 in a year is not a transformation. It is a small salary we had been throwing away, and the only reason we found it is that we started counting.
